Who discovered fizzy water? Right, surprisingly, you have to go back to 1767. Yep, that far. The first carbonated beverage was a happy accident. Englishman Joseph Priestly suspended a bowl of water over a beer vat in a brewery and unwittingly discovered carbonated water by infusing water with carbon dioxide. His invention would eventually lead to the beginning Fizzstory of the soft drink revolution popularised in 1783 when a certain gentleman with the surname Schweppe began producing soda water on a large scale. Joseph Priestly, the grandfather of fizzy pop, would go on to make another important discovery in 1774 – oxygen!

FIZZ Not just water gets the sparkling treatment with the Breville InFizz Fusion. Words Bec Summer S parkling water has always been popular (unless you’re out at the restaurant – and then it’s tap water all the way!), and ON THE

limit on what you can fizz – as long as it’s cold. So, water (of course!), juices, teas, flat fizzy drinks, exciting cocktails, and wine can all be lifted with bubbles using the InFizz Fusion. There’s scope for a lot of experimentation. It’s worth mentioning the design of the unit itself here. Boasting an elegant aesthetic, this device has been designed to be proudly displayed on a kitchen bench and not locked away in a cupboard or pantry. It comes in three colourways: brushed stainless steel, Black Truffle, and Sea Salt, stunning in form and functionality. The unit takes the popular-sized Sodastream gas bottle and comes with a one-litre bottle ready for action. The Breville InFizz Fusion is the complete package for carbonating liquids. It delivers a controlled burst of bubbles

designed bottles, screw on the cap, insert the bottle into the InFizz Fusion unit with a twist. There's a lever on top of the device that distributes the carbonation, and the number of times you press the lever will determine how fizzy the liquid inside is. Once the desired fizz is achieved, you simply twist out the bottle and then release any gas build-up by toggling a red button on the FusionCap before pouring. Alternatively, if you want to save the drink for later,

for good reason. Feeling that freshly created H2O fizz at the back of the throat on a hot day provides an indescribable satisfaction. Producing carbonated water at home saves the unnecessary use of single-use plastic bottles. While home-produced sparkling water has been available to Australian households since the late ‘70s, Breville have taken a fresh approach with its InFizz Fusion. Yes, it’s still possible to produce sparkling water, but the difference here is that just about any cold drink you can think of can now be carbonated, from cocktails to cold teas. The secret to this versatile fizz is all in the lid. Called the FusionCap, this is where the magic happens. The cap is the gas delivery system and bottle stopper all in one. Pour whatever liquid you want to fizz into the specially

keep the red button in place to retain the fizz. When it comes to drinks, there really is no

for the perfect fizz and will look good wherever you put it in the kitchen.
